Serves 5-6
Ingredients
1 medium onion peeled and chopped
2 tablespoons (tbsps) butter
2 medium sized russet potatoes peeled and diced
1 medium sized potato peeled and diced
2-3 carrots peeled and diced
1 stalk celery, sliced
¾ can red peas and or green beans or cup of cooked red peas and green peas (I used both)
½ cup of cooked or canned corn
½ teaspoon (tsp) dried thyme
1 ½ tablespoons flour
32 to 38 ounces chicken stock
Salt, pepper and parsley
1 cup cooked chicken; chicken can be shredded 1 tablespoon sour cream or cheddar cheese
Preparation
1. Melt butter in a large saucepan. Add onion celery and sauté over low heat for 3-4 minutes to soften. Put flour and stir to remove any lumps and cook for about 1 minute. Pour chicken stock and continue stirring.
2. Add all the vegetables and thyme then bring liquid to a boil over medium heat. At this time vegetables will be cooked. After this reduce heat to low and add chicken, sour cream, salt and pepper to taste then stir and cook for an additional 15 minutes.
When soup is ready to be eaten, use parsley to garnish it.
